Ingredients

Protein and Fat

  • 4 chicken breasts
  • 1 tablespoon ghee or butter

Liquids

  • 4 cups water
  • 4-5 cups chicken broth
  • 2 tablespoons lemon juice

Vegetables

  • 2-3 celery stalks, diced
  • 2-3 carrots, diced
  • 3 garlic cloves, minced
  • 1 yellow onion, finely chopped
  • 2 large zucchinis, spiralized into noodles

Seasonings

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 teaspoon poultry seasoning
  • 1/2 teaspoon celery salt

Instructions

  1. Sauté Aromatics: Place a large pot or Dutch oven over medium-high heat and add the ghee or butter. Once melted, add the minced garlic and finely chopped onion. Stir together and cook for about 1 minute until fragrant and slightly softened.
  2. Cook the Chicken: Add the chicken breasts to the pot and pour in the chicken broth and water to cover them. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Let the chicken cook gently for 20 minutes until fully cooked through and tender.
  3. Prepare Vegetables: While the chicken simmers, dice the celery stalks and carrots. Spiralize the zucchinis to create fresh zucchini noodles (zoodles).
  4. Combine and Simmer: Add the lemon juice, diced celery, diced carrots, zucchini noodles, salt, pepper, poultry seasoning, and celery salt to the pot. Stir well with a large wooden spoon to combine all ingredients. Let the soup simmer gently for another 5 to 10 minutes until the vegetables are tender but still have a bit of bite.
  5. Serve and Garnish: Ladle the soup into bowls and serve hot. Garnish with fresh lemon slices and parsley if desired. Enjoy this nourishing and flavorful Chicken Zoodle Soup!

Notes

  • Using homemade or low-sodium chicken broth can help control salt levels.
  • To save time, you can spiralize the zucchinis and chop vegetables ahead of time.
  • Adjust the seasoning to taste, particularly salt and poultry seasoning.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • For added flavor, garnish with fresh herbs such as parsley or thyme.
