This Chili Cheese Dip is a warm, creamy, and spicy appetizer perfect for game day or casual gatherings. Made with chili, cream cheese, shredded cheeses, and salsa, it melts together into a flavorful dip that pairs wonderfully with tortilla chips, bread cubes, or vegetables. This recipe offers two cooking methods: stovetop for quick preparation or slow cooker for effortless warming and melting.

Ingredients

Main Ingredients

  • 2 1/2 cups chili (homemade or 2 (14 oz) cans store-bought, approximately 625g)
  • 4 ounces cream cheese, cut into cubes (113g)
  • 2 cups shredded cheese (pepper jack and sharp cheddar blend recommended, 226g)
  • 1/4 cup salsa (60g)
  • Cayenne pepper or hot sauce, optional for added heat

Instructions

  1. Prepare Ingredients: Gather all ingredients ensuring cream cheese is cubed and cheeses are shredded for even melting.
  2. Cook on Stovetop: Place chili, cream cheese cubes, shredded cheese, salsa, and optional cayenne or hot sauce in a medium saucepan over medium-low heat. Stir constantly for about 5 minutes until the cheese has fully melted and the dip is hot and bubbly.
  3. Slow Cooker Option: Spray the slow cooker with non-stick cooking spray or use a liner. Add cream cheese cubes first, then layer chili on top, followed by salsa, and finally sprinkle shredded cheddar cheese evenly over the top. Cook on LOW for 1 to 3 hours, stirring occasionally until smooth and hot.
  4. Serve: Transfer dip to a serving bowl and serve immediately with tortilla chips, bread cubes, vegetables, or use it as a topping for chili hot dogs, nachos, or baked potatoes.

Notes

  • Stirring constantly on the stovetop prevents the cheese from sticking or burning.
  • Use your preferred chili for flavor customization; meat-based or vegetarian chili both work well.
  • The slow cooker method is excellent for keeping dip warm during parties.
  • Adjust heat level with cayenne pepper or hot sauce to taste.
  • For a smoother texture, consider blending the chili before mixing.
