  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 Tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin

Additional Ingredients

  • 2 cups roasted herb tomatoes (see Roasted Herb Tomato recipe)
  • Homemade corn or flour tortillas, charred
  • Jalapeños, chopped, to taste
  • 1 batch of dairy-free chipotle sauce/dressing (recipe referenced)

Instructions

  1. Make Roasted Herb Tomatoes: Prepare the roasted herb tomatoes by following the dedicated roasted herb tomato recipe, which will add a bright, flavorful base note to your tacos.
  2. Prepare Roasted Vegetables: Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
  3. Season Vegetables: In a bowl, combine peeled and cubed sweet potatoes, whole poblano peppers, olive oil, oregano, parsley, basil, smoked paprika, and garlic powder. Toss until evenly coated.
  4. Roast Vegetables: Arrange veggies in a single layer on the baking sheet. Roast for 20-25 minutes until sweet potatoes are tender and both sweet potatoes and peppers are nicely charred and golden. Remove from oven and chop roasted poblano peppers into pieces.
  5. Cook Quinoa: In a medium saucepan, bring vegetable stock to a boil over medium-high heat. Add quinoa, whisk continuously for 1-2 minutes. Reduce heat to simmer, whisking every 3-4 minutes until quinoa is cooked, stock absorbed, and mixture thickened. Stir in sea salt, black pepper, smoked paprika, and garlic powder until combined.
  6. Sauté Black Beans: In a medium skillet over medium-high heat, warm olive oil. Add rinsed black beans along with garlic powder, oregano, smoked paprika, parsley, and cumin. Cook for 5-6 minutes, stirring occasionally. Remove from heat and let cool slightly.
  7. Prepare Chipotle Sauce: Prepare the dairy-free chipotle sauce/dressing as per the recipe linked or referenced in your recipe collection.
  8. Char or Warm Tortillas: To warm tortillas, preheat oven to 350°F (177°C). Place tortillas directly on oven rack and turn off oven once heated, leaving tortillas inside for 2 minutes. Alternatively, char tortillas over a gas burner by placing one tortilla onto the flame until light smoke appears, then flip to char the opposite side. Repeat for all tortillas.
