Ingredients

Peanut Butter Cookies

  • 1/2 cup unsalted butter, room temperature
  • 1 cup creamy peanut butter (like Skippy or Jif)
  • 3/4 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cups all purpose flour
  • 1/3 cup granulated sugar (for rolling)

Ice Cream

  • 5-6 cups chocolate ice cream

Magic Shell Coating

  • 2 cups dark chocolate chips (or semi-sweet)
  • 1/4 cup coconut oil

Toppings (optional)

  • Mini chocolate chips
  • Chopped peanuts

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking trays with parchment paper to prevent sticking and ensure easy cleanup.
  2. Make Cookie Dough: Using a stand mixer or hand mixer, beat the softened butter and creamy peanut butter together until the mixture is light and fluffy. Add granulated sugar and brown sugar, beating again until combined and fluffy. Add the egg and mix until fully incorporated. Then add vanilla extract, baking soda, and salt, mixing well. Finally, add the all-purpose flour and mix until a dough forms.
  3. Shape and Prepare Cookies: Roll the dough into 1 tablespoon-sized balls. Roll each ball in granulated sugar, then place on prepared baking sheets, spacing them about 2 inches apart. Use a fork to press a criss-cross pattern onto the top of each cookie.
  4. Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the cookies have just set on top but are still soft. Remember, the cookies will firm up as they cool. Allow the cookies to cool completely on the baking sheet before assembly.
  5. Prepare Ice Cream Discs: Line a 1/2 cup measuring cup with plastic wrap. Spoon chocolate ice cream into the cup, pressing down to form a compact disc shape. Fold the plastic wrap over the top and lift out the ice cream disc. Repeat to make 12 discs. Freeze the discs for at least 30 minutes to 1 hour to firm up, especially if the ice cream is soft.
  6. Make Magic Shell: Melt the dark chocolate chips along with the coconut oil until smooth. This can be done by microwaving in 30-second bursts at 50% power, stirring between intervals, or by using a double boiler. Allow the magic shell mixture to cool for 10-15 minutes, stirring occasionally.
  7. Assemble Sandwiches: On a parchment-lined baking sheet, arrange 12 cooled peanut butter cookies. Unwrap the ice cream discs and place one disc on each cookie. Top with the remaining cookies to form sandwiches. If the ice cream softens during assembly, freeze the sandwiches for 15-20 minutes until firm.
  8. Dip in Magic Shell and Decorate: Dip each ice cream sandwich halfway into the cooled magic shell. Place back on the lined baking sheet. While the shell is still wet, sprinkle with mini chocolate chips and chopped peanuts as desired.
  9. Freeze to Set: Freeze the assembled and dipped sandwiches for 30 minutes to 1 hour before serving to allow the magic shell to harden and ice cream to firm up completely.
