These Peanut Butter Oat Cups are a delicious and nutritious snack, combining creamy peanut butter with hearty oats, a touch of maple syrup, and a rich chocolate topping. Ingredients

Base

  • 2/3 cup peanut butter
  • 3/4 cup old fashioned (rolled) oats
  • 2 tbsp maple syrup

Topping

  • 1 tbsp peanut butter (per oat cup)
  • 3 tbsp protein powder
  • 1/2 cup peanut butter
  • 1 cup chocolate chips (melted)
  • Flaky sea salt (optional)

Instructions

  1. Mix peanut butter and maple syrup: In a bowl, thoroughly mix together the 2/3 cup peanut butter and 2 tablespoons maple syrup until smooth and well combined.
  2. Add oats: Stir in the 3/4 cup old fashioned rolled oats into the peanut butter mixture, mixing well to ensure an even blend of ingredients.
  3. Form base cups: Spoon about 2 tablespoons of the oat mixture into each silicon mold cavity, pressing down firmly with a spoon or cookie scoop to create an even base layer.
  4. Prepare topping: In a separate bowl, mix 1/2 cup peanut butter with 3 tablespoons protein powder until smooth. Then, add about 1 tablespoon of this peanut butter-protein mixture (or just plain peanut butter if preferred) on top of each oat base. Place the molds in the freezer for 20 minutes to firm up.
  5. Melt chocolate: While the cups freeze, melt 1 cup chocolate chips with approximately 2 teaspoons of oil in the microwave. Heat in 30-second increments, stirring well between each until fully melted and smooth.
  6. Top with chocolate: Remove the oat cups from the freezer and spoon melted chocolate over each one, spreading evenly. Return to the freezer for an additional 20 minutes to set.
