Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C). Line a jumbo muffin pan with 12 jumbo muffin liners to prevent sticking and ensure easy removal.
  2. Combine wet ingredients: In a large bowl, use an electric mixer to beat together the eggs, vegetable oil, milk, water, and vanilla extract until the mixture is smooth and well combined.
  3. Add the Greek yogurt: Stir in the plain Greek yogurt thoroughly until the batter is smooth and uniform in texture.
  4. Incorporate dry ingredients: Add the white cake mix and instant vanilla pudding mix to the wet ingredients. Use a spoon to gently fold the ingredients together just until combined—avoid overmixing to ensure tender muffins.
  5. Fold in chocolate chips and sprinkles: Gently fold in 1 cup of semi-sweet chocolate chips, 1 cup of white chocolate chips, and the tablespoon of Christmas sprinkles to give the batter a festive look and taste.
