Ingredients

Chicken & Marinade

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Marinade: In a small mixing bowl, whisk together the olive oil, chopped cilantro, lime juice, minced garlic, red pepper flakes, cumin, paprika, salt, and black pepper until well combined.
  2. Marinate the Chicken: Place the chicken thighs in a large bowl and pour the marinade over them. Using kitchen tongs, toss the chicken thoroughly to coat each piece evenly. Let the chicken marinate uncovered for 15 minutes at room temperature or cover and refrigerate for up to 2 hours for deeper flavor.
  3. Heat the Skillet: Warm a skillet over medium-high heat. Once hot, add a teaspoon of olive oil to the pan to prevent sticking and help achieve a nice sear.
  4. Cook the Chicken: Add the marinated chicken thighs to the skillet in a single layer. Cook for 5 to 6 minutes on each side until the chicken is no longer pink inside and reaches an internal temperature of 165°F (75°C).
  5. Serve: Transfer the cooked chicken to a serving dish. For extra brightness, squeeze fresh lime juice over the top and sprinkle with additional chopped cilantro before serving. Enjoy your flavorful cilantro lime chicken!

Notes

  • Marinating longer (up to 2 hours) enhances the flavor significantly, but 15 minutes works well for a quick meal.
  • Use a meat thermometer to ensure chicken is cooked through to avoid dryness or undercooking.
  • Serve with rice, tortillas, or a fresh salad to complete the meal.
  • Chicken thighs are preferred for their tenderness and juiciness, but boneless skinless chicken breasts can be substituted if desired.
  • Adjust red pepper flakes based on your preferred spice level.
