Ingredients

Marinade/Sauce

  • 2 tablespoons olive oil
  • 1 cup cilantro (packed)
  • 2 limes (juiced)
  • 1 tablespoon Worcestershire sauce
  • 4 cloves garlic (chopped)
  • 2 shallots (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon freshly ground black pepper

Shrimp and Cooking

  • 1 pound large shrimp (thawed, peeled, deveined, and patted dry)
  • 2 tablespoons olive oil (divided for marinating and cooking)

Instructions

  1. Prepare the Marinade/Sauce: In the bowl of a large food processor or blender, add 2 tablespoons of olive oil, cilantro, lime juice, Worcestershire sauce, garlic, shallots, oregano, smoked paprika, red pepper flakes, salt, and black pepper. Process until the mixture is fully combined and smooth. Taste and adjust seasoning with additional salt, pepper, or lime juice if needed.
  2. Marinate the Shrimp: Place the thawed, peeled, and deveined shrimp in a medium bowl. Drizzle with 1 tablespoon of olive oil and 2 tablespoons of the prepared cilantro-lime marinade. Mix well to coat the shrimp evenly. Let the shrimp marinate for at least a few minutes or up to 30 minutes maximum to enhance flavor. Reserve the remaining marinade to serve as a dipping sauce later.
  3. Cook the Shrimp: Heat a large skillet over high heat until very hot. Add the remaining 1 tablespoon of olive oil and swirl to coat the pan evenly. Add the shrimp in a single layer, ensuring not to overcrowd the pan to allow even cooking. Cook for 1-2 minutes on the first side until pink and slightly charred, then flip and cook the other side for an additional 1-2 minutes, until the shrimp are fully cooked and opaque. Work in batches if necessary.
  4. Serve: Plate the cooked shrimp and drizzle with the reserved cilantro lime sauce. Optionally, squeeze additional fresh lime juice over the top for extra brightness. Enjoy immediately while warm.
