Ingredients

Banana Bread Batter

  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten free all purpose flour
  • 1 cup old fashioned rolled oats

Cinnamon Swirl

  • 4 tbsp melted vegan butter
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon

Vegan Cream Cheese Frosting

  • 3/4 cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat Oven and Prepare Pan: Begin by preheating your oven to 375°F (190°C). Lightly grease a metal loaf pan with non-stick spray to ensure your bread does not stick.
  2. Make the Banana Bread Batter: In a large mixing bowl, mash the overripe bananas thoroughly with a fork. Add the melted vegan butter, maple syrup, plant-based milk, vanilla extract, cinnamon, baking powder, baking soda, and salt. Mix all ingredients well to combine. Then, gently fold in the all-purpose flour and rolled oats until a smooth batter forms.
  3. Prepare the Cinnamon Swirl: In a small separate bowl, combine the melted vegan butter, light brown sugar, and cinnamon. Stir until the mixture is smooth and well blended.
  4. Combine Batter and Swirl: Pour the banana bread batter into the greased loaf pan. Drizzle the cinnamon swirl mixture evenly over the top. Use a spoon or knife to gently fold and swirl the cinnamon mixture through the batter, creating a marbled effect.
  5. Bake the Bread: Place the loaf pan into the preheated oven. Bake for 55 to 60 minutes or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  6. Prepare the Frosting: While the banana bread is baking, whisk together the melted vegan butter, powdered sugar, and softened vegan cream cheese until smooth and creamy to create the vegan cream cheese frosting.
  7. Frost and Serve: Once the bread is done baking, allow it to cool for a couple of minutes in the pan. Carefully drizzle the vegan cream cheese frosting over the warm loaf. Serve warm and enjoy the deliciously rich flavors.

Notes

  • Use very ripe bananas for the best natural sweetness and moisture.
  • You can substitute the all-purpose flour with gluten-free flour for a gluten-free version.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a nutty twist, add chopped walnuts or pecans to the batter before baking.
  • If you prefer, you can replace the vegan cream cheese frosting with a simple glaze made from powdered sugar and plant milk.
