These Cinnamon Roll Bites are a delicious, bite-sized treat made with tender dough rolled in a cinnamon-sugar mixture, baked to golden perfection, and drizzled with a sweet glaze. Ingredients

Dough

  • 2 cups flour (whole wheat, all purpose, or a mix)
  • 1 tbsp baking powder
  • ¼ tsp salt
  • ½ cup cold butter
  • ¾-1 cup cold milk

Cinnamon Sugar Coating

  • 3 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • ½ cup butter, melted

Glaze

  • ⅓ cup icing sugar
  • 1-2 tbsp milk (just enough to bring the glaze together)

Instructions

  1. Combine dry ingredients: In a large bowl, mix together the flour, baking powder, and salt until evenly distributed.
  2. Cut in the butter: Cube the cold butter and add it to the dry ingredients. Use a pastry cutter or fork to work the butter into the flour mixture until the butter pieces are about the size of peas.
  3. Form the dough: Gradually stir in the cold milk, adding just enough to allow the dough to come together. Use your hands to gather the dough into a ball, adding a little more flour if it becomes sticky from too much milk.
  4. Prepare baking dish: Preheat your oven to 350°F (175°C). Lightly grease a 10-inch pie plate or baking dish, or line it with parchment paper for easy cleanup.
  5. Make cinnamon sugar coating and shape dough balls: In a medium bowl, combine the brown sugar, granulated sugar, and cinnamon. Roll the dough into 1-inch balls. Dip each ball into the melted butter, then coat thoroughly with the cinnamon sugar mixture. Place the coated balls evenly in the prepared baking dish.
  6. Add extra butter and bake: Drizzle any remaining melted butter over the dough balls in the dish. Bake for 20 to 25 minutes, or until the biscuits are cooked through and the butter-sugar mixture is bubbling at the bottom.
