This vibrant Citrus Salad Dressing combines fresh orange segments with a balanced blend of olive and vegetable oils, brightened by lemon juice and apple cider vinegar. Sweetened gently with honey and seasoned with shallots, salt, and pepper, it’s a smooth and versatile dressing perfect for fresh salads or as a zesty marinade.

Ingredients

Citrus and Flavorings

  • 1/2 orange (peeled and segmented)
  • 2 tablespoons chopped shallot (from about 1/2 small shallot)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 1/2 teaspoons honey
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Oils

  • 1/4 cup extra virgin olive oil
  • 1/4 cup vegetable oil

Instructions

  1. Blend Ingredients: Place the orange segments, chopped shallot, extra virgin olive oil, vegetable oil, fresh lemon juice, apple cider vinegar, honey, kosher salt, and ground black pepper into a blender. Blend on high speed until the mixture is completely smooth, ensuring a well-emulsified dressing. Taste the dressing and adjust the flavor by adding more honey for sweetness or more lemon juice for extra brightness as needed.
  2. Store and Serve: Use the dressing immediately for the best fresh flavor, or transfer it to a sealed container and refrigerate for up to one week. Before serving after refrigeration, allow the dressing to sit at room temperature for about 20 minutes, then shake vigorously or whisk to recombine the ingredients thoroughly.

Notes

  • The dressing can be refrigerated for up to 7 days; always shake or whisk before use as natural separation will occur.
  • Adjust honey and lemon juice levels to suit your personal taste preferences for sweetness and acidity.
  • This dressing works well on mixed greens, spinach, or drizzled over roasted vegetables.
  • For a smoother texture, strain the dressing through a fine mesh sieve after blending if desired.
