Instructions

  1. Preheat the Oven: Preheat your oven to 325˚F. Prepare a non-stick muffin tin by spraying it with cooking spray. If using silicone muffin cups, spraying is not necessary.
  2. Blend Ingredients: In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until the mixture is smooth and well combined, ensuring a creamy texture for the egg bites.
  3. Prepare Muffin Cups: Divide the shredded cheese or your selected toppings evenly among the muffin cups. Then pour the blended egg mixture into each cup, filling them about three-quarters full to allow room for the bites to expand while baking.
  4. Bake the Egg Bites: Place the muffin tin in the preheated oven and bake at 325˚F for 22-25 minutes, or until the edges and centers are fully set and the tops are firm to the touch. Alternatively, you can cook them in an air fryer at 300˚F for 12-14 minutes, covering lightly with foil if they brown too quickly.
  5. Rest and Serve: Once baked, let the egg bites rest in the muffin tin for 5 minutes before carefully removing them. This helps them set further and makes them easier to handle.
