Tender steak bites seared to perfection and coated in rich, flavorful cowboy butter, making for a quick and indulgent appetizer or main dish perfect for sharing.

Ingredients

Steak Bites

  • 1 tablespoon extra virgin olive oil
  • 1 pound steak, cut into 1-inch pieces (top sirloin or ribeye work well)

Cowboy Butter

  • 1 recipe cowboy butter, divided (typically made with butter, garlic, lemon juice, herbs, and spices)

Instructions

  1. Heat oil. Place a medium skillet over medium-high heat and add the olive oil. Allow the oil to heat until it is hot and shimmering to ensure a good sear.
  2. Cook steak. Add the steak bites in a single layer, cooking in batches if necessary to avoid overcrowding. Sear for 1½ to 2 minutes without moving the pieces to develop a crust. Flip and cook for another 1 to 2 minutes until your preferred doneness is reached.
  3. Reduce heat. Lower the heat to medium to prepare for adding the butter without burning it.
  4. Add cowboy butter. Add half of the cowboy butter to the skillet and toss the steak bites to evenly coat them. Continue to cook for an additional minute until the butter melts and glazes the steak.
  5. Melt remaining butter and serve. Warm the remaining cowboy butter separately, such as in the microwave, and serve on the side as a dipping sauce or drizzle for extra flavor.

Notes

  • Make sure not to overcrowd the pan to get a good sear on the steak bites.
  • Use a high smoke point oil like olive oil to prevent burning.
  • Cowboy butter is typically made with butter, garlic, lemon juice, and herbs; having it homemade or store-bought works.
  • Adjust steak cooking time depending on thickness and desired doneness.
  • Serving with additional cowboy butter on the side adds an extra layer of richness.
