Ingredients

Crab Cake Mixture

Instructions

  1. Mix the ingredients: Place the crab meat in a large bowl and flake it into bite-sized pieces with a fork if needed. Gently fold in the beaten eggs, followed by the panko breadcrumbs, minced celery, green onions, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, sea salt, and black pepper.   2. Form the patties: Divide the crab mixture into 8 equal portions. Shape each portion by hand into patties roughly 3 inches wide and 1 inch thick, ensuring they hold together well for frying.
  3. Heat the oil: Pour about ¼ inch of vegetable oil into a large skillet and heat it over medium-low until the oil is shimmering but not smoking, preparing it for frying the crab cakes evenly.
  4. Add crab cakes to the pan: Carefully place the crab cakes in a single layer in the hot oil, working in batches if necessary to avoid overcrowding, which can prevent proper browning.
  5. Cook the patties: Fry the crab cakes until the bottoms are golden brown, about 3 minutes. Flip them carefully and cook the other side for another 3 minutes until equally golden and crispy. Transfer the cooked crab cakes to a wire rack to drain excess oil. Add more oil as needed between batches.
