  • 1/4 cup apple cider vinegar
  • 12 oz fresh cranberries (1 package)

  • Zest of one orange
  • Dash of cinnamon (more to taste)

Crostini Ingredients

  • 1 baguette (approx. 12 oz)
  • 5-6 oz Brie cheese
  • 1-2 tablespoons olive oil
  • 1/4 cup chopped pecans
  • Rosemary sprigs for garnish
  • Extra orange zest for garnish

Instructions

  1. Make the Cranberry Chutney: In a saucepan, combine cranberry juice cocktail, apple cider vinegar, fresh cranberries, brown sugar, diced apple, golden raisins, orange zest, and cinnamon. Bring the mixture to a boil over medium-high heat, stirring occasionally until cranberries start to pop. Then reduce the heat to low and simmer for about 15 minutes until the chutney thickens. Transfer to a bowl and chill until cooled. The chutney can be made 1-2 days ahead.
  2. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the crostini.
  3. Prepare the Baguette Slices: Slice the baguette diagonally into 1/2 to 3/4-inch thick pieces, discarding the ends. Arrange the slices on a parchment-lined baking sheet. Brush or drizzle olive oil evenly over each piece to ensure a golden, crispy texture when baked.
  4. Add Brie to Crostini: Place slices of Brie cheese evenly on each baguette slice, covering the surface to get a nice melt.
  5. Bake the Crostini: Bake the prepared slices in the preheated oven for 5-7 minutes or until the Brie cheese has melted and started to bubble. Remove from the oven carefully.
  6. Assemble and Garnish: Spoon a generous amount of the chilled cranberry chutney onto each melted Brie crostini. Sprinkle with chopped pecans, extra orange zest, and garnish with a rosemary sprig for an aromatic finish.
  7. Serve: Serve the crostini immediately while the Brie is warm and melty for the best flavor and texture experience.
