Ingredients

Meatloaf Mixture

  • 16 ounces ground turkey (1 pound / 453.59 grams)
  • 1/2 cup finely chopped fresh yellow onion (1 medium)
  • 1/3 cup dried cranberries
  • 1/3 cup panko breadcrumbs
  • 1/4 cup all-purpose cream (heavy cream)
  • 1 medium egg
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon rubbed sage
  • 1/2 teaspoon kosher salt (add more to taste)
  • 1/2 teaspoon ground black pepper (add more to taste)

Cranberry Glaze

  • 250 grams whole cranberry sauce
  • 3 tablespoons ketchup
  • 2 sprigs fresh rosemary

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 375°F (191°C) and set it for 45 minutes to ensure it reaches the right temperature for cooking the meatloaf evenly.
  2. Prepare Breadcrumb Mixture: In a bowl, combine the panko breadcrumbs and heavy cream, mixing well to allow the breadcrumbs to absorb the cream and add moisture to the meatloaf.
  3. Make Cranberry Sauce Mixture: In a separate bowl, mix the whole cranberry sauce with ketchup until well combined. Add the fresh rosemary sprigs into this mixture and set it aside, allowing the flavors to infuse.
  4. Combine Dried Herbs: In a small saucer, mix together the dried rosemary, dried thyme, and rubbed sage; this will be used to season the meatloaf for added flavor.
  5. Mix Meatloaf Ingredients - Part 1: In a large shallow bowl, place the ground turkey, finely chopped onions, dried cranberries, and the breadcrumb mixture. Add half of the dried herb mixture, kosher salt, and black pepper. Lightly combine to mix the ingredients without overworking the meat.
  6. Add Egg and Remaining Herbs: In another bowl, beat the egg and pour it over the meat mixture along with the remaining dried herb mixture. Gently mix everything together until just combined, taking care not to over-mix to keep the meatloaf tender.
  7. Shape Meatloaf: Line the air fryer tray with parchment paper and place it on the baking tray. Add the meatloaf mixture diagonally and shape it into a loaf, making sure it is evenly formed for consistent cooking.
  8. Insert Tray Into Air Fryer: Carefully place the air fryer tray into the middle cooking chamber of the air fryer, positioning it near the rotisserie catch if using an air fryer oven for optimal heat distribution.
  9. Alternative Basket Method: If using an air fryer with a basket, line the basket with parchment paper, place the meatloaf mixture diagonally inside, and form it into a loaf shape.
  10. Initial Air Fry: Start air frying at 375°F (191°C) for 10 minutes. This initial high heat helps to set the shape and start browning the meatloaf.
  11. First Glaze Application: After 10 minutes, spread half of the cranberry sauce mixture evenly over the top of the meatloaf to add moisture and flavor.
  12. Continue Air Frying: Lower the temperature to 350°F (177°C) and continue air frying the meatloaf for another 20 to 25 minutes, allowing it to cook through and the glaze to caramelize slightly.
  13. Final Glaze and Cooking: Spread the remaining cranberry sauce mixture on top and reduce the temperature further to 333°F (167°C). Air fry for an additional 10 minutes or until the internal temperature reaches 165°F (74°C), ensuring the meat is safely cooked.
  14. Rest the Meatloaf: Remove the meatloaf from the air fryer and let it rest for at least 15 minutes before slicing. This helps the juices redistribute, keeping the slices moist and tender.

Notes

  • Ensure not to over-mix the meat mixture to prevent a dense meatloaf.
  • Use a meat thermometer to check for doneness; the internal temperature should be 165°F (74°C).
  • The cranberry glaze adds a nice tangy sweetness, feel free to adjust ketchup amount according to taste.
  • Parchment paper lining helps prevent sticking and makes clean-up easier.
  • If your air fryer is small, you may need to cook the meatloaf in two batches or use a smaller loaf shape.
