This creamy, comforting creamed corn recipe combines sweet corn kernels with a rich, cheesy sauce made from butter, flour, whole milk, and Parmesan cheese. It's easy to prepare on the stovetop and makes a perfect side dish for any meal.

  • 1 tablespoon all-purpose flour
  • 2 cups whole milk (plus more as needed)
  • 2 (10-ounce) packages frozen corn kernels (thawed) or 3½ cups fresh corn kernels (from about 5 ears)
  • 1 garlic clove (grated)
  • ¾ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Make the roux and thicken the milk: Melt the butter in a large skillet over medium heat. Add the flour and cook, stirring, for 1 minute to form a roux. While whisking constantly, slowly add the milk. Reduce the heat to low and simmer the mixture, whisking occasionally, for 5 to 10 minutes until the milk thickens enough to coat the back of a spoon.
  2. Add the corn and seasonings: Stir in the corn kernels, grated garlic, sea salt, and several grinds of freshly ground black pepper. Continue cooking over low heat, stirring occasionally, for 17 to 20 minutes until the mixture thickens further and the corn is tender.
  3. Finish with Parmesan cheese and adjust consistency: Add the freshly grated Parmesan cheese and stir until melted and fully incorporated. If the creamed corn is too thick, add more milk one tablespoon at a time until you reach your desired consistency.
  4. Season and serve: Taste the creamed corn and adjust seasoning if necessary. Serve warm as a delicious side dish.

  • Use fresh corn when in season for the best flavor and texture.
  • Be sure to keep the heat low after adding milk to prevent scorching or curdling.
  • For a lighter version, use low-fat milk or substitute a plant-based milk.
