This Creamy Brussels Sprouts Bake is a deliciously comforting dish featuring tender sautéed Brussels sprouts enveloped in a rich, cheesy cream sauce and baked to golden perfection. Perfect as a hearty side or a vegetarian main, it's an easy way to elevate Brussels sprouts with a luscious blend of mozzarella, parmesan, and cream.

Ingredients

Vegetables

  • 2 lbs Brussels sprouts (washed and cut in half vertically)
  • 1 clove garlic (minced)

Fats & Oils

  • 1 tbsp olive oil
  • 2 tbsp butter

Seasonings & Liquids

  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1/2 cup chicken broth
  • 1 cup heavy cream

Cheeses

  • 1 1/2 cups shredded white cheese (mozzarella, havarti, gouda, or cheddar), divided (1 cup for mixture, 1/2 cup for topping)
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole later.
  2. Prepare Brussels Sprouts: Clean and cut the Brussels sprouts into quarters and set aside for cooking.
  3. Sauté Brussels Sprouts and Garlic: In a large skillet over medium-high heat, warm 1 tbsp olive oil and 2 tbsp butter. Add the cut Brussels sprouts and minced garlic. Season with salt and black pepper. Sauté for about 5 minutes until sprouts start to soften and the garlic is fragrant.
  4. Add Chicken Broth: Pour in 1/2 cup chicken broth and continue to sauté for another 5 minutes. Cook until the broth has evaporated or been absorbed by the sprouts, intensifying their flavor.
  5. Transfer to Baking Dish: Move the cooked Brussels sprouts and garlic mixture into an oven-safe baking dish, spreading evenly.
  6. Add Cream and Cheese: Pour 1 cup of heavy cream over the Brussels sprouts. Stir in 1 cup of the shredded white cheese and all of the shredded parmesan cheese into the mixture. Then sprinkle the remaining 1/2 cup shredded white cheese evenly on top.
  7. Bake: Place the dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the dish is bubbling and the cheese on top is lightly golden brown.
  8. Rest and Serve: Remove from the oven and let the bake sit for 5 minutes to set before serving warm.

  • You can substitute the heavy cream with a lighter cream or half-and-half for a slightly lighter dish, but the texture will be less rich.
