Ingredients

Chicken and Seasoning

  • 2 tablespoons olive oil (or sundried tomato oil from the can)
  • 1 pound chicken breast (about 2 breasts, cut into ¾1 inch pieces)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Sauce and Additional Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • 1 cup chicken stock
  • 1 cup heavy cream (double cream in the UK)
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • ⅓ cup sundried tomatoes (chopped)
  • ½ cup grated Parmesan cheese
  • 2 cups baby spinach leaves

Instructions

  1. Cook Chicken: In a 12 inch stainless steel skillet over medium-high heat, heat the olive oil. Add the chicken pieces, season with Italian seasoning, salt, and black pepper. Cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F (74°C) as checked by an instant-read thermometer. Remove the chicken from the skillet and set aside on a plate.
  2. Sauté Garlic and Deglaze: In the same pan, melt the butter and add the minced garlic. Cook for about 30 seconds until fragrant. Pour in the chicken stock and use a wooden spoon to scrape the browned bits off the bottom of the pan, incorporating all the flavorful residue.
  3. Add Cream and Gnocchi: Stir in the heavy cream and add the gnocchi. Allow the mixture to simmer for 5 minutes; during this time, the sauce will reduce and thicken, and the gnocchi will become tender and cooked through.
  4. Add Seasoning and Cheese: Reduce the heat to medium-low. Stir in the smoked paprika, chopped sundried tomatoes, and grated Parmesan cheese. Mix until well combined.
  5. Wilt Spinach: Add the baby spinach leaves to the skillet and stir to combine, allowing the spinach to wilt. If the sauce is too thick, add a splash of water to loosen it as needed.
  6. Return Chicken and Serve: Return the cooked chicken to the skillet, stir to incorporate all ingredients evenly. Remove the pan from heat and serve the creamy chicken and gnocchi immediately.
