Perfect for a quick and satisfying weeknight meal, this soup is easy to prepare and customizable with your favorite toppings like sour cream, cheese, and avocado.

Ingredients

Main Ingredients

  • 1 lb boneless chicken, cooked and shredded (rotisserie chicken can be used to save time)
  • 1 onion, diced
  • 1 green pepper, diced
  • 4 garlic cloves, minced
  • 1 tbsp butter
  • 6 oz cream cheese, softened
  • 20 oz diced tomatoes with green chilies (about 2 cans mild Rotel)
  • 2 1/2 cups chicken broth
  • 1/2 cup whipping cream
  • 1 packet fajita seasoning (taco seasoning can be substituted)

Toppings (optional)

  • Sour cream
  • Shredded cheese
  • Cilantro
  • Avocado slices

Instructions

  1. Melt Butter and Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, minced garlic, and diced green pepper. Cook and stir occasionally, allowing the vegetables to soften and become fragrant, about 3 minutes.
  2. Add and Incorporate Cream Cheese: Add the softened cream cheese to the pot. Use a spoon or spatula to mash and stir the cream cheese into the vegetables until it begins to melt and blend, creating a creamy base.
  3. Add Tomatoes, Broth, Cream, and Seasoning: Pour in the diced tomatoes along with their juice, chicken broth, whipping cream, and the packet of fajita seasoning. Stir everything well to combine all the flavors into a smooth soup mixture.
  4. Simmer the Soup: Lower the heat to maintain a gentle simmer. Let the soup cook uncovered for about 20 minutes, allowing the flavors to meld and the soup to thicken slightly.
  5. Add Cooked Chicken: Stir the cooked and shredded chicken into the simmering soup. Heat through until the chicken is warmed evenly, about 2-3 minutes.
  6. Serve with Toppings: Ladle the hot soup into bowls and serve with your choice of toppings such as sour cream, shredded cheese, fresh cilantro, and avocado slices. Enjoy your creamy, flavorful chicken fajita soup!

Notes

  • You can substitute rotisserie chicken to significantly reduce prep time.
  • If you prefer spicier soup, use a hotter variety of diced tomatoes with chilies or add extra fajita seasoning.
  • For a lighter version, substitute whipping cream with half-and-half or evaporated milk.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stove.
  • This recipe can be adapted for slow cooking by combining all ingredients except cream cheese and chicken in a slow cooker and cooking on low for 4 hours, then stirring in cream cheese and chicken at the end.
