Ingredients

Protein

  • 2 Boneless Skinless Chicken Breasts (cooked & diced)

Seasonings

  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Black Pepper to taste
  • 1 teaspoon Chicken Bouillon Powder

Pasta

  • 8 ounces Orzo Pasta

Vegetables

  • 2 Celery Stalks (finely diced)
  • 2 Carrots (finely diced)
  • ½ Yellow Onion (finely diced)

Fats & Oils

  • 5 tablespoons Butter
  • 2 tablespoons Olive Oil

Liquids

  • 2 cups Chicken Broth
  • ½ cup Heavy Whipping Cream

Flour & Thickener

  • 1/3 cup All Purpose Flour

Instructions

  1. Cook the Orzo and Season Chicken: Cook the orzo pasta according to package instructions until al dente. While the pasta cooks, season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Heat a splash of olive oil in a skillet over medium-high heat. Cook the chicken breasts until they reach an internal temperature of 165°F (74°C). Remove from heat and dice into bite-sized pieces.
  2. Sauté the Vegetables and Make Roux: In a large skillet over medium-high heat, add butter and olive oil. Once the butter has melted, add the diced onion, carrots, and celery. Sauté the vegetables for 5-7 minutes or until they begin to soften. Reduce heat to low, then sprinkle the all-purpose flour evenly over the vegetables. Whisk continuously to combine the flour with the melted butter and veggies into a smooth paste (roux).
  3. Cook the Roux and Add Liquids: Continue stirring the roux constantly for 2-3 minutes to cook out the raw flour taste. Gradually pour in the chicken broth, add the chicken bouillon powder, and then the heavy whipping cream. Whisk the mixture thoroughly to break up any lumps and allow the sauce to thicken.
  4. Combine Chicken and Orzo: Add the diced chicken into the skillet and let the mixture simmer gently allowing the vegetables to finish softening and the sauce to reach your desired consistency. Drain the cooked orzo and stir it into the creamy chicken and vegetable mixture until fully combined.
  5. Serve: Once all ingredients are well incorporated and heated through, serve the creamy chicken pot pie orzo warm. Enjoy your comforting meal!

Notes

  • Ensure chicken is cooked fully to 165°F internal temperature for safety.
  • You can substitute heavy whipping cream with half-and-half for a lighter version, but the sauce will be less rich.
  • Feel free to add peas or mushrooms along with the other vegetables for variation.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove or microwave.
  • For a gluten-free option, use gluten-free flour instead of all-purpose flour and check your chicken broth for gluten content.
