Deliciously crispy corn fritters made with a combination of cream-style and thawed frozen corn, lightly sweetened with honey and perfectly fried for a golden-brown finish. These bite-sized fritters are great as a snack or side dish and are easy to prepare in under 10 minutes.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 Tablespoons baking powder
  • 3/4 teaspoon salt

Wet Ingredients

  • 1 cup cream style sweet corn
  • 1 large egg
  • 2 Tablespoons honey
  • 1 Tablespoon butter, melted

Additional

  • 1/2 cup frozen corn, thawed
  • Oil for frying (approximately 4 inches deep)

Instructions

  1. Heat the Oil: Pour about 4 inches of oil into a Dutch oven or a large pot and heat it to 325°F. Maintain this temperature carefully to avoid burning the fritters on the outside before cooking through inside.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, and salt, stirring thoroughly to distribute the leavening evenly.
  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the cream-style corn, large egg, honey, and melted butter until fully blended.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until there are no remaining dry patches, forming a uniform batter.
  5. Add Frozen Corn: Fold the thawed frozen corn into the batter, ensuring an even distribution of kernels for texture.
  6. Fry the Fritters: Carefully drop 1-Tablespoon portions of batter into the hot oil using a cookie scoop or spoon, frying in small batches of 5-6 fritters at a time.
  7. Cook Evenly: Fry the fritters for 3-4 minutes, stirring occasionally to ensure that they brown evenly on all sides and cook through.
  8. Drain and Rest: Remove the fritters with a slotted spoon and place them on a paper-towel-lined plate to absorb excess oil; then immediately transfer them to a wire rack set over a sheet tray.
  9. Keep Warm: Place the wire rack with fritters in a preheated 200°F oven to keep warm while frying the remaining batter.
  10. Serve: Serve the corn fritters immediately while warm for the best texture and flavor experience.

Notes

  • Maintain the oil temperature at 325°F to ensure fritters cook through without burning outside.
  • Use a 1-Tablespoon cookie scoop for uniform-sized fritters, which promotes even cooking.
  • Keep fritters warm in a low oven while frying batches to serve all fresh and hot.
  • These fritters are best enjoyed immediately but can be kept warm for up to 30 minutes without losing crispiness.
