Ingredients

Dressing

  • 3 tablespoons low fat Greek yogurt
  • 1 tablespoon mayonnaise
  • 2 tablespoons pickle juice
  • 1 teaspoon yellow mustard
  • 1 clove garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon sugar
  • 2 teaspoons dried dill or 2 tablespoons fresh dill

Coleslaw

  • 6 cups thinly sliced cabbage (about 1 small green cabbage or 10-oz bag shredded cabbage slaw)
  • 1 cup small diced dill pickle

Instructions

  1. Prepare the dressing: In a medium bowl, whisk together the low fat Greek yogurt, mayonnaise, pickle juice, yellow mustard, minced garlic, kosher salt, sugar, and dill until the mixture is smooth and well combined.
  2. Combine cabbage and pickles: Place the thinly sliced cabbage and small diced dill pickle into a large mixing bowl. Pour the prepared yogurt dressing over the cabbage and pickles.
  3. Toss to coat evenly: Gently toss the cabbage and pickle mixture with the dressing until all the strands of cabbage and pieces of pickle are evenly coated with the creamy dressing.
  4. Serve or chill: You can serve the coleslaw immediately for a fresher crunch, or cover and chill it in the refrigerator for at least 30 minutes to allow the flavors to meld together thoroughly before serving.
