Ingredients

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 3 teaspoons Italian seasoning
  • ⅓ cup flour
  • 4 tablespoons Parmesan cheese, shredded
  • 3 tablespoons olive oil

Sauce

  • 2 ½ cups chicken broth
  • 1 beef bouillon cube (or 1 teaspoon Better Than Bouillon)
  • 1 teaspoon low sodium soy sauce (or Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon mustard powder
  • 3 tablespoons butter
  • 10 whole cloves garlic
  • 3 tablespoons flour
  • ½ cup heavy cream
  • ½ cup Parmesan cheese (optional)

Instructions

  1. Prep Work: Combine the chicken broth, bouillon cube, soy sauce, onion powder, mustard powder, and thyme in a large measuring cup with a spout and set aside. Mix the flour and Parmesan cheese on a plate. Measure out remaining ingredients to have everything ready before cooking.
  2. Prepare the Chicken: Slice the chicken breasts in half lengthwise to create 2-3 thinner pieces. Cover with plastic wrap and use the textured side of a meat mallet to gently pound the chicken to about ½ inch thickness. Pat each piece completely dry with paper towels.
  3. Season and Dredge: Season both sides of the chicken slices with Italian seasoning, salt, and pepper. Dredge each piece in the flour and Parmesan mixture, tapping off any excess to ensure an even coating.
  4. Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Working in batches, sear the chicken for 4-5 minutes on each side until a golden brown crust forms. Remove the chicken and set aside.
  5. Make the Garlic Sauce: Lower the heat to medium or medium-low and melt the butter in the same skillet. Use a silicone spatula to scrape and loosen browned bits from the pan to enhance flavor. Add the whole garlic cloves and cook them gently, allowing them to soften and caramelize for 6-7 minutes.
  6. Add Flour: Sprinkle in the flour and stir constantly for 1-2 minutes to cook off the raw flour taste and create a roux base for the sauce.
  7. Add Broth Mixture: Slowly pour the prepared chicken broth mixture in splashes while stirring continuously to combine and prevent lumps.
  8. Incorporate Cream and Cheese: Stir in the heavy cream. Bring the sauce to a gentle boil, then reduce heat to low. Gradually add the Parmesan cheese, stirring until melted and the sauce is smooth and creamy.
  9. Simmer Chicken in Sauce: Return the seared chicken to the skillet along with any juices collected on the plate. Spoon the sauce over the chicken pieces. Cover the pan partially and let it simmer for 5 minutes so the chicken finishes cooking and absorbs the flavors of the sauce.
  10. Serve: Garnish with freshly chopped parsley if desired and serve the creamy garlic chicken alongside mashed potatoes and roasted green beans for a complete, satisfying meal.

Notes

  • For even cooking, pound the chicken to uniform thickness to prevent dryness.
  • Caramelizing whole garlic cloves adds a mellow, sweet garlic flavor rather than sharpness.
  • If fresh parsley isn't available, dried parsley or fresh chives work as garnish alternatives.
  • You can substitute low sodium soy sauce with Worcestershire sauce for a different umami note.
  • For a lighter version, substitute heavy cream with half-and-half, but the sauce will be less rich.
  • Deglaze the pan thoroughly to incorporate flavorful browned bits into the sauce.
  • If you want extra sauce, add a little more chicken broth or cream to adjust consistency.
