Creamy Garlic Parmesan Shrimp Roll-Ups are a delightful blend of tender shrimp cooked in a rich garlic-parmesan cream sauce, rolled in soft flour tortillas, and baked to golden perfection. This dish offers a comforting and flavorful seafood meal perfect for family dinners or special occasions.

Ingredients

Shrimp Filling

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 4 ounces cream cheese
  • 1 cup grated parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)

Assembly

  • 6 large flour tortillas
  • Extra grated parmesan cheese (optional, for topping)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a baking dish to prevent sticking.
  2. Sauté Garlic: In a skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Make Roux and Sauce: Stir in the flour and cook for an additional minute to form a roux. Gradually whisk in the milk, continuing to whisk until the sauce thickens and becomes smooth.
  4. Add Cheeses: Stir in the cream cheese and grated parmesan until fully melted and the sauce is creamy.
  5. Cook Shrimp: Add the shrimp to the skillet and cook until they turn pink and are cooked through, approximately 3 minutes. Season the mixture with salt and black pepper.
  6. Prepare Baking Dish: Spread a thin layer of the creamy shrimp sauce on the bottom of the greased baking dish to prevent sticking and add flavor.
  7. Assemble Roll-Ups: Place a portion of the shrimp mixture onto each flour tortilla, then roll them up tightly. Arrange the roll-ups seam-side down in the prepared baking dish.
  8. Add Sauce and Cheese: Pour the remaining creamy sauce evenly over the top of the assembled roll-ups. Sprinkle with additional parmesan cheese if desired for extra flavor and a golden crust.
  9. Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the roll-ups are golden brown and the sauce is bubbly.
  10. Garnish and Serve: Remove from the oven and sprinkle chopped fresh parsley over the top before serving. Enjoy warm for a comforting and flavorful meal.

Notes

  • You can substitute flour tortillas with corn tortillas for a gluten-sensitive option, but the texture may vary.
  • For a spicier version, add a pinch of red pepper flakes to the sauce when cooking the garlic.
  • Ensure shrimp is fully cooked but not overcooked to remain tender and juicy.
  • The sauce can be prepared a day ahead and refrigerated; warm it gently before assembling the roll-ups.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in the oven for best results.
