This Creamy Mushroom Chicken recipe features tender chicken cutlets simmered in a rich and flavorful mushroom cream sauce, perfect for a comforting and elegant dinner in just 30 minutes.

Ingredients

Chicken

  • 2 large chicken breasts
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Mushrooms & Sauce

  • 12 ounces mushrooms (cremini or white, sliced)
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy/whipping cream

Instructions

  1. Prepare the chicken: Cut your chicken breasts in half lengthwise to make four thinner cutlets. Season them well with salt and pepper, then dredge each piece lightly in flour, shaking off any excess. This helps to create a nice crust when cooked.
  2. Heat the oil: Add the olive oil to a skillet and heat it over medium-high heat until hot and shimmering.
  3. Cook the chicken: Place the floured chicken cutlets in the hot skillet. Cook each side for 4-5 minutes until they develop a golden brown crust and are nearly cooked through. Remove the chicken from the pan and set aside to rest.
  4. Sauté the mushrooms: Add the butter to the same skillet and allow it to melt completely. Add the sliced mushrooms and sprinkle with Italian seasoning. Cook the mushrooms while stirring occasionally until they release their moisture, the liquid evaporates, and they develop a nice sear and rich brown color.
  5. Remove mushrooms: Take the sautéed mushrooms out of the pan and place them on a plate (it's fine to use the same plate as the chicken).
  6. Make the sauce base: Into the pan, add the minced garlic, chicken broth, lemon juice, and Dijon mustard. Stir well until the mustard dissolves completely. Allow this mixture to simmer and reduce by about half, which should take approximately 3-4 minutes.
  7. Finish the sauce and cook chicken through: Pour the heavy cream into the pan along with the reserved chicken and mushrooms. Simmer everything together for about 5 minutes until the chicken is fully cooked and the sauce thickens to a creamy consistency. Taste and season the sauce with additional salt and pepper as needed.

Notes

  • For the best texture, slice the chicken breasts carefully to ensure even thickness for cooking.
  • Feel free to substitute mushroom varieties like button or shiitake according to preference.
  • If the sauce becomes too thick, thin it with a splash of additional chicken broth or water.
  • This dish pairs wonderfully with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
