Ingredients

Vegetable Filling

  • 2 tbsp olive oil
  • 3 cups fresh spinach, roughly chopped
  • 2 cups mushrooms, sliced
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Béchamel Sauce

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups warm milk
  • ½ tsp ground nutmeg
  • Salt and pepper to taste

Lasagna Layers

  • 9 lasagna noodles (no-boil or pre-cooked)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup ricotta cheese

Instructions

  1. Prepare the vegetable filling: Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until softened and lightly browned. Add the minced garlic and chopped spinach to the pan and cook until the spinach wilts. Season with salt and pepper, then remove from heat and set aside.
  2. Make the béchamel sauce: In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes to form a roux paste. Gradually whisk in the warm milk, ensuring there are no lumps. Bring to a gentle simmer while stirring constantly until the sauce thickens. Season with ground nutmeg, salt, and pepper, then remove from heat.
  3. Assemble the lasagna: Preheat the oven to 375°F (190°C). Spread a thin layer of béchamel sauce on the bottom of a 9×13-inch baking dish. Lay down 3 lasagna noodles over the sauce. Spread one-third of the vegetable filling over the noodles, add dollops of ricotta cheese, sprinkle mozzarella cheese, and spoon some béchamel sauce on top. Repeat these layers two more times, finishing with a layer of béchamel sauce and topping with remaining mozzarella and Parmesan cheeses.
  4. Bake the lasagna: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for another 15 minutes until the cheese is bubbly and golden brown.
  5. Serve: Allow the lasagna to rest for 10 minutes before slicing to let it set. Serve warm and enjoy the creamy, cheesy flavors.
