Ingredients

Salmon

  • 4 pieces Salmon fillets (4-6 ounces each)

Filling

  • 1 cup Cream Cheese, softened
  • 1 cup Fresh Spinach, chopped
  • 2 cloves Garlic, mashed
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1/2 teaspoon Ground Black Pepper

Seasoning

  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin

For Cooking

  • Butter or oil for greasing the skillet

Instructions

  1. Cut Salmon: Cut slits or pockets about 3/4 quarter of the way through each salmon fillet, being careful not to cut all the way through. Repeat for each piece and set them aside.
  2. Prepare Filling: In a bowl, combine the softened cream cheese, chopped spinach, mashed garlic, freshly grated parmesan cheese, and ground black pepper. Mix well until all ingredients are evenly combined. Soften cream cheese in the microwave for 20 seconds if needed before mixing.
  3. Stuff Salmon: Stuff the prepared filling into the slits or pockets in the salmon fillets, packing it in as much as possible for a generous filling.
  4. Prepare Seasoning: In a small bowl, mix together the paprika, garlic powder, and cumin until fully combined to create the spice rub.
  5. Season Salmon: Rub the spice mixture evenly on top of each stuffed salmon fillet to enhance flavor.
  6. Grease Skillet: Grease a large oven-safe skillet, such as a 10-inch cast iron skillet, with butter or oil to prevent sticking. Then transfer the salmon fillets into the skillet.
  7. Broil: Place the skillet in the oven and broil for about 13 minutes, or until the salmon is cooked through to your liking. The salmon should be opaque and flaky when done.
  8. Serve and Enjoy: Remove from the oven, carefully plate the stuffed salmon, and serve immediately while warm. Enjoy your delicious creamy spinach stuffed salmon!

Notes

  • Ensure cream cheese is softened for easier mixing and stuffing.
  • Broiling times may vary depending on oven performance and salmon thickness; monitor closely to avoid overcooking.
  • Use fresh spinach for the best flavor and texture.
  • Cast iron skillet is recommended for even heat distribution while broiling.
  • Feel free to adjust spices to taste or add a squeeze of lemon juice for brightness before serving.
