Crispy Baked Chicken Taquitos are a delicious and easy-to-make snack or meal. Made with shredded seasoned chicken rolled in corn tortillas and baked to golden perfection, these taquitos offer a healthier alternative to fried versions while still delivering plenty of crunch and flavor. Ingredients

Chicken Filling

  • 2 cups shredded cooked chicken
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ¼ tsp salt

Taquitos

  • 16 small corn tortillas
  • Cooking spray

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F (220 degrees C). Line a baking sheet with a cooling rack or parchment paper to prevent sticking and allow even crisping, then set aside.
  2. Prepare Chicken Mixture: In a large bowl, combine the shredded cooked chicken with chili powder, garlic powder, onion powder, cumin, and salt. Stir thoroughly to ensure the spices are evenly distributed throughout the chicken.
  3. Warm and Soften Tortillas: Heat a non-stick skillet over medium heat. Place each tortilla in the skillet and cook for 30 to 45 seconds on each side until warmed and pliable. This step softens the tortillas, making them easier to roll without cracking. After heating, place the tortillas in a zip-close bag to steam and keep them soft while you assemble.
  4. Assemble Taquitos: Lay out each softened tortilla and spoon about 2 tablespoons of the seasoned chicken mixture in a line along one edge. Roll the tortilla tightly around the filling, then place it seam-side down on the prepared baking rack or parchment-lined baking sheet. Leave space between each rolled taquito to allow for even cooking.
  5. Spray and Bake: Lightly spray all sides of the rolled taquitos with cooking spray to promote browning and crispness. Bake in the preheated oven for 18 minutes. Carefully flip each taquito over and bake for an additional 5 minutes until the taquitos are browned and crispy on all sides.
