For the Zucchini Chips

  • 2 medium zucchini (about 1 pound total weight)
  • 3/4 teaspoon kosher salt (divided)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • Olive oil spray

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with high-heat-resistant parchment paper and coat it with olive oil spray to prevent sticking and help with crisping.
  2. Slice Zucchini: Cut the zucchini into 1/8-inch-thick rounds using a sharp knife or mandoline for uniform thickness, which ensures even baking and crispiness.
  3. Salt and Drain Zucchini: Sprinkle the zucchini slices with 1/2 teaspoon of kosher salt. Place them in a colander set in the sink and let them stand at room temperature for 30 minutes. This process draws out water from the zucchini, which helps them become crispier when baked. After 30 minutes, rinse the slices thoroughly to remove excess salt and blot them dry with paper towels.
  4. Arrange and Initial Bake: Lay the dried zucchini slices in a single layer on the prepared baking sheet. Lightly spray them with olive oil spray to promote browning and crispness. Bake in the preheated oven for 15 minutes.
  5. Add Seasonings and Parmesan: Remove the baking sheet from the oven and sprinkle the zucchini with the remaining 1/4 teaspoon kosher salt, black pepper, garlic powder, and grated Parmesan cheese. There is no need to flip the slices at this point.
