Instructions

  1. Heat the Birria: Make sure your batch of Birria is heated through thoroughly. The rendered fat should rise to the top of the red chile broth (consomé), which will be used to dip and coat the tortillas, enhancing flavor and pliability.
  2. Prepare the tortillas: Using a non-stick skillet over medium-high heat, dip both sides of a corn tortilla into the top fatty layer of the red chile broth. Immediately transfer the dipped tortilla to the hot skillet. Sprinkle a generous amount of shredded cheese over the entire tortilla, allowing it to begin melting.
  3. Assemble the taco: Spoon several spoonfuls of the shredded Birria meat onto one edge of the tortilla. Using a spatula, carefully fold the opposite end of the tortilla over the filling to create a taco. Lightly press down on the folded taco with the spatula to secure it in place.
  4. Pan-fry the taco: Fry the taco for 1-2 minutes on each side until the tortilla is crispy and the cheese inside is bubbly and melted, adding extra spoonfuls of the chile-infused broth over the taco as needed to maintain moisture and flavor. Cook longer if you desire a crunchier texture.
  5. Repeat and serve: Transfer the cooked taco to a baking sheet or serving platter. Repeat the dipping, assembling, and frying process for the remaining tacos. Serve warm, garnished with chopped cilantro, finely chopped red onion, and lime wedges. Offer a small bowl of consomé broth on the side for dipping.
