Ingredients

Dough

  • 2 cups all-purpose flour

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, add the flour, 2 tablespoons of granulated sugar, baking powder, and salt. Stir together with a fork until evenly mixed.
  2. Add Wet Ingredients and Form Dough: Pour in the oil and warm water. Stir until a dough forms, slightly sticky but manageable.
  3. Knead the Dough: Transfer dough to a floured surface and knead for about 5 minutes until smooth and elastic, adding flour if too sticky.
  4. Rest the Dough: Shape dough into a ball, cover with a clean kitchen towel, and let rest for 20 minutes to relax the gluten.
  5. Prepare Frying Setup: Line a baking sheet with paper towels. Heat frying oil in a medium pot or Dutch oven to 375°F, maintaining temperature for frying.
  6. Make Cinnamon Sugar Topping: In a shallow dish, combine the remaining 1 cup granulated sugar with 1 teaspoon ground cinnamon and set aside.
  7. Shape Sopapillas: Divide the dough into two halves. Roll each half into a ¼-inch thick square. Cut each square into 9 roughly 3-inch pieces using a pizza cutter or knife, totaling 18 pieces.
  8. Fry the Sopapillas: Fry in batches, adding 2 pieces at a time to the hot oil. Use a slotted spoon to gently submerge each piece fully. The dough will puff with a large air pocket.
