These Crispy Oven Baked Egg Rolls offer a healthier twist on the classic fried version by baking them to golden perfection. Filled with a flavorful mix of cole slaw, garlic, ginger, and soy sauce, they make a delicious appetizer or snack that's crispy on the outside and tender inside, without the excess oil from frying.

Ingredients

Filling

  • 1 bag cole slaw mix (about 14-16 oz)
  • 1 tsp garlic, minced
  • 1/4 tsp ground ginger
  • 2 tbsp soy sauce
  • Salt and pepper, to taste

For Wrapping and Cooking

  • Egg roll wrappers (enough to make 8-9 egg rolls)
  • Cooking spray (olive oil or vegetable oil)

Instructions

  1. Prepare the filling: In a medium bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, and salt and pepper to your preference. Mix thoroughly to evenly distribute the seasonings.
  2. Cook the filling: Cover the bowl with plastic wrap or a microwave-safe lid and microwave on high for 3-5 minutes, until the cole slaw is softened and cooked through. Drain any excess liquid thoroughly to prevent soggy egg rolls, then stir the filling again to coat evenly with the seasonings.
  3. Assemble the egg rolls: Lay the egg roll wrappers flat on a clean surface. Place about 1/2 cup of the cooked filling in the center of each wrapper. Fold in the sides, then roll tightly from one end to the other to enclose the filling securely, sealing the edge to prevent opening during baking.
  4. Prepare for baking: Lightly spray a baking sheet with cooking spray to prevent sticking. Arrange the assembled egg rolls on the sheet, spacing them evenly.
  5. Spray and bake: Spray the tops of the egg rolls lightly with cooking spray to help achieve a crispy, golden exterior. Bake in a preheated oven at 375°F (190°C) for 10-15 minutes.
