Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (roughly 2 pounds)
  • Kosher salt & ground black pepper, to season

Dredging Station

  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly whisked
  • 1 cup panko breadcrumbs
  • 1/4 cup seasoned Italian breadcrumbs
  • Heaping 1/2 cup grated Parmesan cheese

Cooking

  • 1/3 cup olive oil, divided

Instructions

  1. Prep the chicken: Place a chicken breast between two pieces of plastic wrap and use a meat mallet or rolling pin to pound it to an even thickness of about 1/4 inch. Repeat for all breasts. Season both sides with 1/2 teaspoon kosher salt and ground black pepper.
  2. Prepare the dredging station: Set out three shallow plates or bowls. Put the all-purpose flour on one, whisk the eggs in the second, and combine the panko breadcrumbs, seasoned Italian breadcrumbs, and grated Parmesan cheese on the third. Lightly season each mixture with kosher salt and ground black pepper and stir to evenly incorporate.
  3. Bread the chicken: Working one breast at a time, lightly dust it with flour, shaking off excess. Dip it in the egg mixture, then press it firmly into the breadcrumb and Parmesan mixture, ensuring an even coating. Shake off any excess and set aside. Repeat for all chicken breasts.
  4. Cook the parmesan crusted chicken: Heat 3 to 4 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, swirl the oil to coat the pan evenly. Add two chicken breasts at a time, making sure not to overcrowd the pan. Cook for 2 to 3 minutes per side until the coating is crispy and golden brown and the chicken is cooked through. Transfer to a plate. Add remaining olive oil as needed and cook the remaining breasts in the same manner.
