Crock Pot Marry Me Chicken is a creamy, flavorful slow-cooked chicken dish featuring tender chicken breasts simmered in a savory sauce made with sun-dried tomatoes, garlic, heavy cream, and Parmesan cheese. Perfect for an effortless meal, this recipe combines aromatic herbs and a rich, velvety sauce, making it ideal to serve over pasta, rice, or with crusty bread.

Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder

Sauce

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.33 cup sun-dried tomatoes, chopped
  • 0.25 cup Parmesan cheese, grated
  • 1 tsp dried oregano
  • 1 tsp dried basil

Garnish & Optional

  • 2 tbsp fresh parsley, chopped
  • Red pepper flakes (optional)

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder to ensure the meat is flavorful throughout.
  2. Sear the chicken: Heat the olive oil in a large skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until they turn golden brown. This step locks in flavors and adds a nice crust. Transfer the seared chicken to the slow cooker.
  3. Sauté garlic: In the same skillet, sauté the minced garlic for about 1 minute until fragrant, then transfer it to the slow cooker with the chicken.
  4. Prepare the sauce: In a mixing bowl, whisk together the heavy cream, chicken broth, chopped sun-dried tomatoes, grated Parmesan cheese, dried oregano, and dried basil until smooth and well combined.
  5. Combine and cook: Pour the cream mixture over the chicken in the slow cooker, making sure the chicken is mostly covered by the sauce. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and fully cooked through.
  6. Adjust seasoning: Before serving, taste the sauce and adjust the salt and pepper as needed. Add red pepper flakes if you prefer a little heat.
  7. Garnish and serve: Sprinkle freshly chopped parsley over the dish for a pop of color and freshness. Serve the creamy chicken over pasta, rice, or with crusty bread to soak up the delicious sauce.

Notes

  • For best results, sear the chicken before slow cooking to develop deeper flavor and improve texture.
  • If using dried sun-dried tomatoes packed in oil, drain excess oil to avoid making the sauce too greasy.
  • You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less rich.
  • Cooking times may vary depending on your slow cooker model; ensure the chicken reaches an internal temperature of 165°F (75°C).
  • Leftovers can be refrigerated for up to 3 days and reheat well.
