Ingredients

Chicken and Seasonings

  • 1.5 lb chicken breast (about 4, 6 oz. pieces) (chicken thighs will work)

  • 1 tsp paprika
  • ¼ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt

Honey Mustard Sauce

  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2-3 garlic cloves, minced
  • 2 Tbsp butter, melted
  • ¼ cup heavy cream

Optional Thickener

  • 2 Tbsp corn starch
  • 4 Tbsp cold water

Instructions

  1. Season the chicken: Pat your chicken pieces dry with a paper towel. Evenly sprinkle the salt, pepper, oregano, onion powder, and paprika over the chicken, making sure all sides are covered to infuse flavor.
  2. Prepare the honey mustard sauce: In a bowl, whisk together the honey, Dijon mustard, minced garlic, and melted butter until the mixture is smooth and well combined. Pour this sauce over the seasoned chicken, ensuring the pieces are as covered as possible.
  3. Slow cook the chicken: Close the crockpot and set it to cook on LOW for about 3 hours. The chicken should reach an internal temperature of 165°F to be safely cooked. If possible, check the chicken after 2 hours to monitor progress.
  4. Shred the chicken and add cream: Once cooked, shred or pull the chicken into large chunks directly in the crockpot. About 30 minutes before serving, pour in the heavy cream and stir it into the sauce to add richness.
  5. Thicken the sauce (optional): If you prefer a thicker sauce, whisk together the cold water and cornstarch until smooth, then stir this slurry into the crockpot. Allow it to cook on a warm or low setting for about 30 minutes. The sauce will thicken gradually, depending on your crockpot’s heat.
  6. Serve: Once the sauce has reached your desired thickness, your honey mustard chicken is ready to serve. Enjoy it over rice, noodles, or alongside steamed vegetables.
