This Crockpot Salsa Verde Chicken recipe is an easy and flavorful slow-cooked dish featuring tender boneless chicken breasts simmered in tangy salsa verde with cumin and fresh cilantro. Ingredients

Chicken and Seasoning

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin

Sauce

  • 2 cups salsa verde

Garnish

  • 2 tablespoons chopped fresh cilantro
  • Optional: sour cream (for serving, see notes)

Instructions

  1. Slow cook. Add the chicken breasts, salsa verde, kosher salt, and ground cumin into the slow cooker. Stir everything gently to combine the ingredients evenly. Cover with the lid and cook on high for 2 ½ to 3 hours or on low for 4 to 5 hours until the chicken is fully cooked and tender.
  2. Shred the chicken. Carefully remove the cooked chicken breasts from the slow cooker using tongs and transfer them to a cutting board. Using two forks, shred the chicken into bite-sized pieces, ensuring it is nicely pulled apart.
  3. Mix together. Return the shredded chicken back into the slow cooker with the salsa verde sauce and stir well to coat the meat thoroughly. If you desire a creamier texture, you can stir in some sour cream at this point (see notes). Garnish with fresh chopped cilantro before serving.

Notes

  • For a creamier version, stir in a few tablespoons of sour cream after shredding the chicken and mixing it back into the sauce.

  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
