Ingredients

  • 1 teaspoon dried parsley

Liquids and Oils

  • 2 tablespoons sunflower oil
  • 1 1/2 cups unsweetened almond milk

Eggs

  • 4 large eggs, beaten

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and adjust the rack to the middle position to ensure even baking.
  2. Sauté Onions: Heat 2 tablespoons of sunflower oil in a 12-inch cast iron skillet over medium-high heat. Add the diced onions and sauté for about 5 minutes until they become translucent, developing a sweet aroma.

  4. Mix Eggs and Almond Milk: In a medium bowl, whisk together the 4 beaten eggs and 1 1/2 cups unsweetened almond milk until the mixture is smooth and uniform.
  5. Combine and Distribute Mixture: Pour the egg and milk mixture into the skillet over the sautéed spinach and onions. Stir gently to distribute the ingredients evenly throughout the skillet.
  6. Bake the Quiche: Place the skillet in the preheated oven on the middle rack. Bake for 25 to 30 minutes until the quiche is firm and set in the center.
