Instructions

  1. Preheat and Prepare: Preheat your oven to 350 degrees F (175 degrees C). Line two baking pans with parchment paper to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: Using an electric mixer on medium speed, beat the chilled, cubed butter together with the granulated sugar until the mixture becomes light and fluffy, about 2 minutes. This step is key to a soft texture.
  3. Add Wet Ingredients and Leavening: Mix in the egg, vanilla extract, baking powder, and salt until everything is well combined and the batter is smooth, scraping down the sides of the bowl to incorporate all ingredients evenly.
  4. Incorporate Flour: Lower mixer speed to low and gradually add in the flour. Mix only until the dough starts to come together; avoid overmixing. Finish mixing with a rubber spatula by folding and pressing the dough to fully combine all the flour.
