Ingredients

Meat and Vegetables

  • 2 tablespoons oil (or butter)
  • 1 pound ground lamb (or beef)
  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 2 cloves garlic, chopped

Sauce and Seasonings

  • 2 tablespoons tomato paste
  • 2 tablespoons all purpose flour (gluten-free flour for gluten-free option)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce (gluten-free for gluten-free option)
  • 1 teaspoon rosemary, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon thyme, chopped (or 1/2 teaspoon dried)
  • 2 bay leaves (optional)
  • 1 cup peas
  • Salt and pepper to taste

To Serve

  • 4 cups mashed potatoes, hot

Instructions

  1. Cook the Meat: Heat the oil in a pan over medium-high heat. Add the ground meat and cook, breaking it apart with a spoon as it cooks, for about 7-10 minutes until fully cooked. Set aside and drain all but 2 tablespoons of grease from the pan.
  2. Sauté Vegetables: In the same pan, add the diced onions and carrots. Cook for 5-7 minutes until the vegetables become tender and slightly caramelized.
  3. Add Garlic and Tomato Paste: Stir in the chopped garlic and tomato paste until well combined. Then sprinkle the flour over the mixture, stir to incorporate thoroughly, and cook for about one minute to remove the raw flour taste.
  4. Make the Sauce: Gradually add the beef broth while stirring, then return the cooked meat to the pan. Add the Worcestershire sauce, chopped rosemary, thyme, and bay leaves. Bring the mixture to a simmer and cook for 5-7 minutes until the sauce thickens nicely.
  5. Finish and Serve: Remove and discard the bay leaves. Stir in the peas and season with salt and pepper to taste. Serve the deconstructed shepherd’s pie hot spooned over warm mashed potatoes.
