  • 1 cup dry white rice
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat the Oil: In a large sauté pan, heat the olive oil over medium-high heat to prepare for cooking the beef and vegetables.
  2. Brown the Ground Beef: Add the ground beef to the pan and cook for about 10 minutes, using a spatula to break apart the meat thoroughly as it cooks until it is browned and no longer pink.
  3. Sauté Onion and Garlic: Once the beef is cooked through, add the diced onions and minced garlic to the pan. Cook for 3 minutes to soften the onions and release the garlic's aroma.
  4. Add Remaining Ingredients: Stir in the diced bell peppers, low sodium beef broth, tomato sauce, dry white rice, dried basil, oregano, parsley, and black pepper. Mix well to combine all ingredients evenly.
  5. Simmer Covered: Cover the pan and bring the mixture to a boil, which should take about 5 minutes. Once boiling, reduce the heat to medium and cook covered for 20-25 minutes, stirring every few minutes until the rice is cooked and most of the liquid has absorbed.
  6. Melt the Cheese: When the rice is tender and the liquid is mostly absorbed, top the mixture with shredded mozzarella cheese. Cover the pan again and cook on low heat until the cheese melts and becomes gooey, about 3-5 minutes.
