Ingredients

Vegetables and Herbs

  • 1/4 cup red bell pepper, chopped
  • 1 cup matchstick carrots
  • 1 cup celery, diced
  • 1 shallot or green onion, thinly sliced
  • 2 cloves garlic, minced

Protein and Sauces

  • 1 pound ground chicken
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon Sriracha or hot sauce
  • 1 tablespoon lime juice, fresh squeezed
  • 1 teaspoon ginger, grated
  • 1 tablespoon sugar or honey
  • 1 teaspoon cornstarch

Other

  • 1 tablespoon olive oil
  • 1/4 cup dry roasted peanuts, finely chopped

Instructions

  1. Prepare the vegetables: Heat a large non-stick skillet over medium heat and add olive oil. Once hot, add chopped celery, matchstick carrots, and red bell pepper. Sauté the vegetables for 3-4 minutes until they are crisp-tender. Remove them from the skillet and set aside in a bowl.
  2. Cook the chicken: In the same skillet, add the ground chicken. Break it up with a spoon as it cooks. When the chicken is nearly cooked through, add the minced garlic and sliced shallot or green onion. Cook for an additional minute until fragrant.
  3. Make the sauce: In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, Sriracha, fresh lime juice, grated ginger, sugar (or honey), and cornstarch until the cornstarch is fully dissolved and the mixture is smooth.
  4. Combine everything: Pour the sauce into the skillet with the cooked chicken and stir continuously until the sauce starts to thicken. Return the sautéed vegetables to the skillet and stir well to coat them evenly with the sauce.
  5. Serve: Spoon a generous amount of the chicken and vegetable mixture onto a bib lettuce leaf. Garnish with chopped peanuts, fresh cilantro, additional green onions, and a squeeze of lime wedges. Serve immediately and enjoy.
