Ingredients

Sauce

  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons hoisin sauce
  • 1 teaspoon sesame oil

Main Ingredients

  • 8 ounces uncooked lo mein noodles
  • 2 teaspoons olive oil
  • 1 teaspoon sesame oil
  • 1 1/2 tablespoons minced garlic
  • 2 medium boneless, skinless chicken breasts, cut into thin strips
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 3 cups fresh spinach

Instructions

  1. Make the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil until well combined. Set this flavorful sauce aside for later use.
  2. Cook the noodles: Bring a large pot of water to a boil. Add the lo mein noodles and cook until they are al dente, following package instructions for timing. Drain the noodles well and set aside.
  3. Cook the chicken: Heat a large nonstick sauté pan over medium heat. Add the olive oil and sesame oil, allowing them to heat thoroughly. Add minced garlic and chicken strips; cook while stirring constantly until the chicken is fully cooked through and no longer pink, about 5-7 minutes. Remove the chicken from the pan and set aside.
  4. Sauté the vegetables: In the same pan, add the shredded carrots and snow peas. Cook while stirring frequently until the vegetables are tender but still crisp, approximately 3 minutes.
  5. Combine and finish: Add the fresh spinach, cooked lo mein noodles, cooked chicken, and the prepared sauce to the pan. Stir everything together and cook for about 2 minutes, or until the spinach is wilted and all ingredients are heated through and evenly coated with sauce.
  6. Serve: Remove from heat and serve the chicken lo mein immediately for the best flavor and texture.

Notes

  • You can substitute lo mein noodles with spaghetti or other Chinese egg noodles if unavailable.
  • For added flavor, consider garnishing with chopped green onions or toasted sesame seeds.
  • Adjust the sauce ingredients to taste if you prefer a sweeter or saltier profile.
  • Ensure not to overcook the spinach to maintain its vibrant green color and nutrients.
