This Easy Chicken Quesadilla recipe is a quick and delicious meal perfect for weeknights. Tender, seasoned chicken combined with melted Mexican cheese and folded into warm flour tortillas creates a satisfying and flavorful dish that the whole family will love.

Ingredients

Chicken

  • 1 pound Chicken Breast, diced into 1-inch pieces
  • 1 Tbsp Vegetable Oil
  • 2 Tbsp Taco Seasoning

Quesadilla

  • 3 cups Mexican Shredded Cheese
  • 4 Flour Tortillas, burrito size

Instructions

  1. Heat Oil and Cook Chicken: Heat the vegetable oil in a large skillet over medium heat. Add in the diced chicken and season it with the taco seasoning. Sauté the chicken for 3-4 minutes per side until browned and cooked through.
  2. Set Aside Cooked Chicken: Remove the cooked chicken from the skillet and place it on a separate plate. Set aside for later use.
  3. Prepare Cooking Surface: Heat a griddle or cast iron skillet over medium-high heat to get it ready for the quesadilla assembly.
  4. Assemble Quesadillas: Place a flour tortilla on the heated griddle. Sprinkle a small amount of Mexican shredded cheese on one half of the tortilla, then add a layer of cooked chicken, and top with more shredded cheese. Fold the tortilla over to form a half-moon shape.
  5. Cook Quesadillas: Cook the quesadilla over medium heat until the bottom side is golden brown and crispy, about 3-4 minutes. Carefully flip it over and cook the other side until it is also golden brown and the cheese is melted, another 3-4 minutes. Keep an eye on them to prevent burning.
