Ingredients

Main Ingredients

  • 2 cups chicken, diced
  • 1 pound spaghetti noodles, uncooked
  • 2 (10.5 ounce) cans 98% Fat Free Cream of Chicken Soup
  • 3 cups grated cheddar cheese, divided
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • 1 teaspoon seasoned salt
  • Dash of cayenne pepper
  • 1 (14.5 ounce) can chicken broth

Instructions

  1. Cook Spaghetti: Break the spaghetti noodles into 2-3 inch pieces and cook them according to the package directions until al dente. Drain and place the cooked noodles into a large mixing bowl.
  2. Combine Ingredients: Add the diced chicken to the cooked noodles and toss gently to combine. Stir in the cream of chicken soup, diced onions, diced green peppers, diced tomatoes, 2 cups of the grated cheddar cheese, seasoned salt, and cayenne pepper, mixing well to evenly distribute all ingredients.
  3. Add Broth: Slowly pour in the chicken broth while continuously stirring the mixture to incorporate it evenly and create a creamy consistency.
  4. Transfer to Baking Dish: Lightly spray a 9x13 inch glass baking pan with non-stick cooking spray. Pour the spaghetti mixture into the prepared pan and spread it out evenly. Sprinkle the remaining 1 cup of grated cheddar cheese evenly over the top.
  5. Bake the Casserole: Preheat the oven to 350°F (175°C). Bake the casserole for 30 to 35 minutes, or until the cheese on top starts to bubble and turns lightly golden, indicating the dish is heated through and ready to serve.

Notes

  • For added flavor, use freshly grated cheddar cheese instead of pre-shredded cheese.
  • You can substitute cooked rotisserie chicken if you prefer a shortcut.
  • Adjust the cayenne pepper to taste depending on your preference for spice.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • If you want a lower fat version, you can use reduced-fat cheese and low sodium chicken broth.
