These Easy Coffee Truffles are a luscious and indulgent treat combining rich dark chocolate with the bold flavor of instant coffee. Made with simple ingredients and minimal effort, they're perfect for chocolate lovers and coffee aficionados alike. The creamy ganache centers are chilled until firm, then coated in silky milk chocolate, resulting in a smooth, melt-in-your-mouth dessert ideal for special occasions or everyday indulgence.

Ingredients

Ganache

  • 90 ml (1/3 cup + 2 tsp) thickened/whipping cream
  • 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
  • 1 tbsp instant coffee granules

Coating

  • 125 g (4.5 oz) milk cooking chocolate

Instructions

  1. Prepare dish: Line a small, flat dish (approximately 13 x 18 cm or 7 x 5 inches) with non-stick baking paper. Also line a baking tray with non-stick baking paper and set aside.
  2. Heat cream: Pour the cream into a small saucepan. Warm over low heat until just below boiling point, careful not to scald the cream.
  3. Melt chocolate and combine: Remove from heat and immediately add the finely chopped dark cooking chocolate and instant coffee granules. Stir continuously until the chocolate has completely melted and the mixture is smooth and uniform.
  4. Chill ganache: Pour the chocolate-coffee mixture into the prepared dish. Refrigerate for about 2 hours or until it is firm enough to scoop and roll into balls.
  5. Form truffle centers: Using a small ice cream scoop or teaspoon, scoop about 3 level teaspoons of the ganache mixture. Roll quickly into compact small balls with your hands. If the mixture is too firm, let it sit for 5-10 minutes to soften slightly. Place each ball on the lined baking tray.
  6. Chill balls: Refrigerate the balls for at least 30 minutes or until firm.
  7. Keep hands cool: While rolling the ganache balls, keep an ice pack or frozen peas nearby to cool your hands. Use paper towels to dry your hands as needed.
  8. Melt coating chocolate: Break the milk cooking chocolate into even pieces and place in a heatproof bowl. Set the bowl over a pan of barely simmering water, ensuring no water touches the chocolate. Stir occasionally until the chocolate is almost melted, then remove from heat and let residual warmth finish melting the chocolate.
  9. Cool coating chocolate: Allow the melted chocolate to cool for about 15 minutes to avoid softening the truffles when dipping.
  10. Dip truffles: Remove truffles from the fridge. Dip each ganache ball individually into the melted milk chocolate, using two small forks to rotate and coat evenly.
  11. Drain excess chocolate: Lift coated truffles out with forks and gently smooth excess chocolate on the edge of the bowl. Place coated truffles back on the lined baking tray. If chocolate hardens too much, reheat gently and continue dipping.
  12. Set coating: Refrigerate the tray for about 30 minutes or until the chocolate coating is firm and crisp. Optionally, heat remaining coating chocolate slightly and drizzle over the truffles as decoration.
  13. Storage: Store finished truffles in an airtight container in the refrigerator for up to one week. If stacking layers, separate them with non-stick baking paper sheets.

Notes

  • Use thickened or whipping cream for a smooth, creamy ganache consistency.
  • The dark chocolate used should be cooking chocolate with about 40% cocoa solids for optimal flavor and melting.
  • Instant coffee granules provide a strong coffee flavor without adding moisture.
  • You can adjust the coffee quantity to taste, but 1 tablespoon balances well with the chocolate.
  • Use non-stick baking paper to prevent the ganache and truffles from sticking to the dish and tray.
  • Keeping hands cool is essential as the ganache softens quickly with body heat, making rolling easier and cleaner.
  • Ensure no water comes into contact with the chocolate when melting to prevent seizing.
  • Let the coating chocolate cool slightly before dipping to avoid softening the truffle centers.
  • Truffles can be garnished with a drizzle or toppings of choice for personalization.
