Ingredients

Spice Mix

  • 1/4 cup extra virgin olive oil

Instructions

  3. Season the chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with kosher salt and black pepper, then sprinkle the prepared spice mixture evenly on both sides. Place the chicken in a large bowl, add the diced onions, and pour the marinade over everything. Use your hands or a spoon to ensure all the chicken pieces are thoroughly coated with the marinade.
