Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt

Dairy

  • 1 1/2 cups Greek yogurt or cottage cheese
  • 1 cup shredded mozzarella cheese (more to taste)

Wet Ingredients

  • 1/2 to 3/4 cups pizza sauce

Toppings (Optional)

  • Mini pepperoni
  • Cooked crumbled sausage
  • Diced vegetables

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin by spraying it generously with oil or lining with parchment liners. A silicone muffin pan is recommended for easy removal.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, garlic powder, Italian seasoning, and salt until evenly combined.
  3. Add Dairy and Form Dough: Add the Greek yogurt or cottage cheese to the dry mixture. Mix with a spoon as much as possible, then use clean hands to knead the mixture into a dough ball. If the dough feels too sticky, add 1-2 tablespoons of flour at a time until it is manageable.
  4. Divide Dough: Divide the dough into 12 equal portions, roughly the size of a golf ball each.
  5. Shape Dough Cups: Press each dough ball into the muffin tin cups, flattening the bottom and pushing dough slightly up the sides to create a cup shape that will hold the fillings.
  6. Assemble Pizza Cups: Spoon approximately 1 tablespoon of pizza sauce into each dough cup. Top with 1 to 2 tablespoons of shredded mozzarella cheese and add any optional toppings such as mini pepperoni, cooked sausage, or diced vegetables.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes, or until the dough is golden brown and the cheese has melted and is bubbly.
  8. Cool and Serve: Allow the pizza cups to cool in the pan for at least 5 minutes before removing and serving to let them set.
