This Easy Slow Cooker Taco Dip features seasoned ground beef simmered with diced tomatoes and green chilies, combined with creamy cheeses and fresh lime juice for a flavorful party appetizer. Ingredients

Meat and Seasonings

  • 1 pound lean ground beef
  • ½ teaspoon ground cumin
  • 1 teaspoon granulated garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon kosher salt, divided

Other Ingredients

  • 2 (15-ounce) cans Rotel (diced tomatoes with green chili)
  • 8 ounces cream cheese
  • 1 cup Mexican shredded cheese blend
  • 1 tablespoon fresh lime juice
  • Hot sauce to taste

Instructions

  1. Brown the Beef: Heat a medium skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Sprinkle with cumin, garlic powder, chili powder, and half of the kosher salt. Stir to combine and cook until the beef is fully browned, about 5 minutes.
  2. Transfer to Slow Cooker: Drain any excess grease from the cooked beef. Carefully transfer the beef mixture to a 6-quart slow cooker. Add the diced tomatoes with green chilies and the remaining ½ teaspoon salt. Stir well to combine.
  3. Cook the Dip: Cover the slow cooker and cook on high heat for 2 to 3 hours, or on low heat for 4 to 5 hours, until the beef is very tender and the flavors meld together.
  4. Add Cheeses and Lime: Stir in the cream cheese and Mexican shredded cheese blend until melted and fully incorporated. Add the fresh lime juice and stir again. Taste the dip and adjust seasoning by adding additional salt or hot sauce if desired.
  5. Serve and Store: Set the slow cooker to the warm setting and serve the dip hot. For make-ahead convenience, cool the dip, cover it, and refrigerate for 3 to 5 days. To reheat, place the dip back in the slow cooker on low for 1 to 2 hours until warmed through.
