These rich and fudgy Eggless Brownies are a perfect treat for those who want a delicious chocolate dessert without eggs. Made with simple pantry ingredients like cocoa powder, butter, sugar, and flour, these brownies are easy to prepare and bake. With a moist and gooey texture, they make an ideal snack or dessert for any occasion.

Ingredients

Brownie Batter

  • 10 tablespoons (142 grams) butter, diced
  • 1 1/4 cup (225 grams) granulated sugar
  • 3/4 cup + 2 tablespoons (105 grams) cocoa powder
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 5 tablespoons (75 mL) milk
  • 1/2 cup (63 grams) all-purpose flour

Instructions

  1. Preheat oven: Preheat your oven to 325°F (163°C) and line an 8-inch square baking pan with parchment paper in both directions to ensure the brownies lift out easily after baking.
  2. Heat butter mixture: In a large microwave-safe bowl, combine the diced butter, granulated sugar, and cocoa powder. Microwave the mixture for 30 seconds to start melting the butter and blending the ingredients.
  3. Continue heating and stir: Stir the mixture well and microwave it for another 30 seconds. This helps to fully melt the butter and incorporate the cocoa and sugar evenly.
  4. Add wet ingredients: Stir the mixture until it becomes homogenous. Then add the vanilla extract, salt, and milk, stirring thoroughly to combine. It may be challenging to stir cold milk into the hot mixture at first, but keep stirring until smooth.
  5. Mix in flour: Finally, add the all-purpose flour and stir continuously for about 30 seconds. This extra stirring activates the gluten in the flour, which helps achieve the correct brownie texture.
  6. Bake the brownies: Pour and spread the brownie batter evenly into the prepared baking pan. Bake in the preheated oven for 32-34 minutes until the edges are set but the center remains slightly fudgy.
  7. Cool and serve: Allow the brownies to cool in the pan for 10-15 minutes. Then, use the parchment paper to lift the brownies out of the pan. Slice into pieces and serve.

Notes

  • Use parchment paper to line the pan in both directions for easy removal of brownies.
  • The stirring process is essential to activate gluten and ensure proper brownie texture.
  • Do not overbake to maintain a fudgy center; edges should be set while the middle remains moist.
  • Milk can be substituted with non-dairy milk for a dairy-free variation, adjusting the flavor slightly.
  • These brownies keep well in an airtight container at room temperature for up to 3 days.
